This quick and simple recipe is ideal for anyone who wants to have some fresh homemade raisin tea scones to accompany their meal when having guests or for the family. They go really well with a hot beverage on the side and are a popular comfort food on chilly days and convenient snack to carry to work.
Scones are said to have originated in Scotland in the 1500’s but have now becomes a popular breakfast meal the world over. It eventually rose to popularity and become part of the English culture of having afternoon tea with scones.

The raisins improve the texture and sweetness of the scones giving it a more filling finish and infusing more flavour into the scones.
Nothing beats freshly baked raisin tea scones.
Ingredients required;
- 3 cups All-purpose baking flour
- 1 tablespoon Baking powder
- 3 tablespoons Castor sugar
- 1/4 teaspoon Salt
- 1 cup Natural yoghurt
- 1/2 cup butter
- Lemon zest
- Raisins
- Eggs
- 1 egg yolk
- 1 cup flour
- 50ml Olive oil

Step 1: Preheat oven to 450 degrees F and spread baking sheet with vegetable-cooking oil.
Step 2: In a large bowl mix your flour and baking powder and sieve to remove impurities. Then add sugar to the mixture, butter and lemon zest. Sprinkle a pinch of salt and mix them well until all the ingredients are in shape. Don’t overmix the dough.
Step 3: finally add raisins and butter to the mixture and knead together.
Step 4: On a lightly floured surface, knead dough gently. Roll out the dough to 2cm thickness. Using a cutter like a knife cut out circular shapes or any shape you desire.
Step 5: In a small bowl, combine 1 egg and 1 tablespoon milk to make your perfect egg wash; brush onto scones before baking.
Step 6: Bake for 20 minutes until golden brown.
Step 7: Remove from oven and serve warm. Enjoy!
